For the dressing:

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon apple cider vinegar

Instruction:

In mixing bowl add green veggies like cucumber, cherry tomatoes, bell peppers, red onion, shredded carrots in it.

Crumbled feta cheese and roasted pumpkin seeds, if using, sprinkle over the salad ingredients.

Mix all the veggies in a bowl and also few drops of olive oil approx 1/4 tbs, lemon juice, apple cider vinegar, minced garlic, Dijon mustard, also add salt to taste , and pepper in a small mixing bowl.Add all these according to taste.

Drizzle the dressing over the salad and gently toss to coat evenly.
