Delicious Shahi Kaju Paneer Masala

 Ingredients

1 cup cottage cheese (paneer), cut into cubes

1/2 cup cashews

2 onions, finely chopped

2 tomatoes, pureed

1 tbsp ginger-garlic paste

1/4 cup fresh cream

2 tbsp ghee (clarified butter) or oil

1 tsp cumin

1 tsp red chili powder

1/2 tsp turmeric powder

1 tsp coriander powder

1/2 tsp garam masala

1/2 tsp kasoori methi (dried fenugreek leaves)

salt to taste

Fresh coriander leaves for garnishing

 Step-by-Step Preparation of

For Paste

Blanched Cashew Nut

Salt to taste

Hung Curd -1 cup

Salt to taste

(Less spicy) 1 Green chilli

For Frying

Ghee-2tbs

Oil 1tbs

Paneer, cut into medium size cubes -350 gms

whole Cashew nut 12-15

 

For Gravy

Ghee-1tbs

Oil-1tbs

Bayleaf  2

Cloves 2

Black peppercorns -2-4

Green cardamom 1

finely chopped large onion -2

Green chilli, cut into half -1

Ginger Garlic paste -1/2 tbs

Turmeric powder-1/2 tbs

Coriander powder 2 tbs

small Tomato, finely chopped 1

Little water

Degi red chilli powder 2 tbs

Prepared Paste,

Salt to taste

Water -1 cup

Salt to taste

Sugar- ½ tbs

Kasuri methi -1 tbs

Fried Cashew Nut (kaju)

Fried Paneer

Paneer, grated   ¼ cup

 

For Garnish

Paneer grated

Fried Cashew Nut

Kasuri methi crushed

Method

For Blanching Cashewnut

  • In a shallow pan or pot, add water, cashewnut, salt to taste and blanch it for 4-5 minutes on medium flame.
  • Once done, then strain and transfer it into a bowl.let it to cool down

 

For Paste

  • Take a bowl, then add blanched cashew nut, add salt to taste, hung curd, green chilli.
  • Transfer it into a grinder jar and grind it till it convert into a smooth paste.
  • Then keep aside for further use.

For Frying

  • In a shallow pan, add oil or ghee once it’s hot, add paneer  cubes and fry it until light golden in color.
  • Remove on a plate and keep it aside for further use.
  • In the same oil, add cashew nuts and fry until it turns into in light golden  color.
  • Remove in a separate plate and keep it aside for further use.

For Gravy

  • In a deep pot or kadai, add ghee, oil once it’s hot, add bayleaf, cloves, black peppercorns, green cardamom and let it splutter well.
  • Add onion and saute it until light golden in color. Add green chilli, ginger garlic paste and saute it on medium flame for 4-5 minutes.
  • Add turmeric powder, coriander powder and saute it well. Add tomato and saute it well.
  • Add little water, degi red chilli powder mix well. Add prepared paste and mix it well.
  • Add salt to taste and mix well, cook on medium flame for 5-7 minutes.
  • Add water and mix it well. Add salt to taste, sugar and mix well.
  • Cover it with the lid and cook on low flame for 7 minutes.
  • Add dry fenugreek leaves, fried cashew nut, fried paneer, grated paneer.
  • Give one boil, switch off the flame, transfer it into a serving dish.
  • Garnish it with grated paneer, fried cashew nut, dry fenugreek leaves, coriander sprig.
